  • 12 sheets lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, heat the olive oil and sauté the diced sweet potatoes, butternut squash, and grated carrots until tender.
  3. Mix the ricotta cheese with Italian seasoning, salt, and black pepper in a bowl.
