  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and drain.
  3. In a skillet, sauté the onion and garlic until translucent.
  4. Add the zucchini, yellow squash, and bell pepper; cook until tender.
  5. In a baking dish, spread a layer of marinara sauce, then add a layer of noodles.
  6. Spread ricotta, sautéed vegetables, and mozzarella over the noodles.
  7. Repeat layers, finishing with noodles and marinara sauce topped with mozzarella and Parmesan.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake for an additional 15 minutes until golden.
  10. Let it cool for 10 minutes before slicing.

Notes

  • For extra flavor, add fresh herbs to the vegetable mixture.
  • This lasagna can be made ahead and refrigerated before baking.
