- 9 lasagna noodles
- 2 cups marinara sauce
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions and drain.
- In a skillet, sauté the onion and garlic until translucent.
- Add the zucchini, yellow squash, and bell pepper; cook until tender.
- In a baking dish, spread a layer of marinara sauce, then add a layer of noodles.
- Spread ricotta, sautéed vegetables, and mozzarella over the noodles.
- Repeat layers, finishing with noodles and marinara sauce topped with mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 15 minutes until golden.
- Let it cool for 10 minutes before slicing.
