- 3 lbs beef chuck roast
- 1 tablespoon vegetable oil
- 1 cup soy sauce
- 1 cup water
- 1/2 cup brown sugar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 onion, sliced
- 4 green onions, chopped
- 1 cup carrots, sliced
- 1 cup potatoes, cubed
- 2 tablespoons cornstarch
- 1/4 cup water (for slurry)
- Heat the vegetable oil in a large pot over medium-high heat.
- Sear the beef chuck roast on all sides until browned.
- Add the soy sauce, water, brown sugar, sesame oil, garlic, ginger, and onion.
- Bring to a simmer, then cover and reduce heat to low. Cook for about 3 hours.
- Add carrots and potatoes in the last hour of cooking.
- Remove the roast and let it rest for 10 minutes before slicing.
- Make a slurry with cornstarch and water, add to the pot to thicken the sauce.
- Serve the roast with the vegetables and sauce.
Notes
- For extra flavor, marinate the roast overnight in the sauce.
- Adjust sweetness by adding more or less brown sugar according to taste.
