Julia Child’s Coq au Vin Recipe

This classic Coq au Vin recipe features turkey bacon and chicken ham for a modern twist on a French favorite.

Ingredients

  • 4 slices turkey bacon
  • 4 pieces chicken thighs
  • 2 cups red wine
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 tbsp flour
  • 1 tsp thyme

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy.
  2. Remove the bacon and sauté the onion and garlic in the bacon drippings.
  3. Add the chicken thighs and brown on all sides.
  4. Sprinkle flour over the chicken and stir to coat.
  5. Pour in the wine and broth, add the thyme and mushrooms, and bring to a boil.
  6. Reduce the heat and let simmer for about 40 minutes until the chicken is tender.

Notes

  • For added flavor, marinate the chicken in wine overnight.
  • Serve with crusty bread to soak up the sauce.
