  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 pound chicken breast, shredded
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until softened.
  2. Add carrots and celery, cooking until they begin to soften.
  3. Stir in the shredded chicken, broth, and orzo. Bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Add spinach, oregano, salt, and pepper. Simmer for another 5 minutes.
  6. Stir in lemon juice just before serving.
