- 3 pounds beef chuck roast
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon ginger, minced
- 3 cups beef broth
- 2 carrots, sliced
- 2 cups mushrooms, sliced
- 2 green onions, chopped for garnish
- Heat the vegetable oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned.
- Remove the roast and add chopped onion and garlic to the pot. Sauté until translucent.
- Return the roast to the pot and add soy sauce, brown sugar, rice vinegar, sesame oil, and ginger.
- Pour in the beef broth and bring to a boil.
- Add sliced carrots and mushrooms. Cover and reduce the heat to low.
- Simmer for 3-4 hours or until the meat is tender.
- Once done, remove the roast and let it rest before slicing.
- Serve warm, garnished with chopped green onions.
