  • 3 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon ginger, minced
  • 3 cups beef broth
  • 2 carrots, sliced
  • 2 cups mushrooms, sliced
  • 2 green onions, chopped for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned.
  2. Remove the roast and add chopped onion and garlic to the pot. Sauté until translucent.
  3. Return the roast to the pot and add soy sauce, brown sugar, rice vinegar, sesame oil, and ginger.
  4. Pour in the beef broth and bring to a boil.
  5. Add sliced carrots and mushrooms. Cover and reduce the heat to low.
  6. Simmer for 3-4 hours or until the meat is tender.
  7. Once done, remove the roast and let it rest before slicing.
  8. Serve warm, garnished with chopped green onions.
