  • 4 pieces chicken thighs
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup Irish whiskey
  • 1/2 cup chicken broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons fresh thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Season the chicken thighs with salt and pepper, then add to the pan, cooking until browned on both sides.
  3. Remove the chicken and set aside.
  4. In the same pan, add the onion and garlic, sautéing until soft.
  5. Pour in the whiskey and cook for 2 minutes, scraping the bottom of the pan.
  6. Add the chicken broth and thyme, then return the chicken to the pan.
  7. Cover and simmer for 25 minutes or until the chicken is cooked through.
  8. Stir in the heavy cream, simmering for an additional 5 minutes.
  9. Serve warm with your choice of sides.
