  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 cup chopped bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1/2 cup Greek yogurt
  • 1 cup shredded cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook quinoa according to package instructions.
  3. In a large bowl, combine cooked quinoa, broccoli, bell peppers, onions, garlic, white beans, Greek yogurt, half of the cheese, salt, pepper, and Italian seasoning.
  4. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  5. Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
  6. Let it cool for a few minutes before serving.
