- 1 cup quinoa
- 2 cups broccoli florets
- 1 cup chopped bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1/2 cup Greek yogurt
- 1 cup shredded cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Preheat your oven to 375°F (190°C).
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, broccoli, bell peppers, onions, garlic, white beans, Greek yogurt, half of the cheese, salt, pepper, and Italian seasoning.
- Transfer the mixture to a greased baking dish and top with the remaining cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
