High-Protein Pancake Sausage Mini Muffins

These delicious mini muffins combine the flavors of pancakes and sausage for a perfect breakfast treat!

  • 1 cup pancake mix
  • 1/2 cup cooked sausage, crumbled
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large bowl, mix together pancake mix and cinnamon.
  3. In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the crumbled sausage.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 12-15 minutes or until a toothpick comes out clean.
  8. Let cool before removing from the pan.
