High-Protein Chicken Cottage Cheese Enchilada Bowls

These High-Protein Chicken Cottage Cheese Enchilada Bowls are a delicious and nutritious twist on traditional enchiladas, packed with flavor and great for a protein boost.

  • 1 cup cottage cheese
  • 2 cups cooked chicken, shredded
  • 1 cup enchilada sauce
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese, any kind
  • 8 corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cottage cheese, shredded chicken, black beans, corn, cumin, garlic powder, and onion powder.
  3. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
