- 1 cup diced onion
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 cup cooked turkey bacon, crumbled
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Add broccoli florets and chicken broth; bring to a boil. Reduce heat and simmer until broccoli is tender.
- Using an immersion blender, puree the soup until smooth.
