Hearty Lentil and Potato Soup

A comforting and filling soup that combines the wholesome goodness of lentils and potatoes, perfect for cold nights.

Ingredients

  • 1 cup dry lentils
  • 2 large potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and garlic, and sauté until softened.
  2. Add lentils, potatoes, vegetable broth, cumin, thyme, and bay leaf. Bring to a boil.
  3. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  4. Remove bay leaf, and season with salt and black pepper to taste.
  5. Serve hot and enjoy!
