- 1 cup dry lentils
- 2 large potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and garlic, and sauté until softened.
- Add lentils, potatoes, vegetable broth, cumin, thyme, and bay leaf. Bring to a boil.
