Hearty Lentil and Potato Soup

Ingredients

  • 2 large potatoes, diced
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sauté until translucent.
  3. Add the carrots and potatoes, stirring for 5 minutes.
  4. Stir in the lentils, broth, thyme, cumin, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer.
  6. Cook for 25-30 minutes or until lentils are tender.
  7. Blend partially if a creamier texture is desired.
