  • 4 cups vegetable broth

  • 1/2 teaspoon black pepper
  • 1 cup carrots, chopped
  • 1 cup celery, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until onion is translucent.
  2. Add carrots, celery, and potatoes; cook for about 5 minutes.
  3. Stir in lentils, vegetable broth, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes or until lentils and vegetables are tender.
  5. Adjust seasoning to taste and serve warm.
