  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cauliflower florets
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. In the same pot, add onion and garlic, cooking until softened.
  3. Add chicken broth, heavy cream, and cauliflower; bring to a boil.
  4. Reduce heat and simmer until cauliflower is tender.
  5. Blend the soup until smooth, then stir in chopped bacon and season.
  6. Serve hot, garnished with extra bacon if desired.
