Hearty Italian Sausage Lasagna Soup

  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 2 cups lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the chicken broth, crushed tomatoes, lasagna noodles, and Italian seasoning.
  4. Simmer for about 20 minutes, until the noodles are tender.
  5. Remove from heat and stir in ricotta and mozzarella cheeses until melted.
  6. Garnish with fresh basil and serve.
