Ingredients

  • 1 cup pistachios, shelled
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, baking powder, and sea salt.
  3. In another bowl, mix melted coconut oil, maple syrup, and vanilla extract.
  4. Combine the dry ingredients with the wet ingredients and stir well.
  5. Add pistachios and fold them into the cookie dough.
  6. Drop tablespoon-sized scoops of dough onto a baking sheet.
  7. Bake for 10-12 minutes or until golden.
  8. Let the cookies cool before enjoying.

Notes

  • For a variation, add dark chocolate chips.
  • They can be served with tea or milk.
