Healthy & Creamy Tuscan Salmon Pasta

A deliciously healthy take on Tuscan salmon pasta that combines creamy flavors with nutritious ingredients.

  • 8 ounces pasta of choice
  • 2 tablespoons olive oil
  • 1 pound salmon fillets
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 cup heavy cream or a lighter alternative
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the salmon with salt and pepper and add to the skillet. Cook until golden on both sides and cooked through, about 4-5 minutes per side. Remove from skillet and flake into large pieces.
  4. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  5. Stir in the cherry tomatoes and cook until they begin to soften.
  6. Add spinach and allow to wilt.
  7. Pour in the cream and Italian seasoning, stirring to combine.
  8. Add the cooked pasta and flaked salmon, tossing to coat everything in the creamy sauce.
  9. Finish with grated Parmesan cheese and adjust seasoning if necessary.
  10. Serve warm and enjoy!

Notes

  • For a lighter version, substitute heavy cream with Greek yogurt or cashew cream.
