  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the rolled oats, grated carrots, applesauce, honey or maple syrup, and vanilla extract until well combined.
  3. Add the cinnamon, nutmeg, baking soda, and salt. Stir until everything is evenly mixed.
  4. If using, fold in the chopped walnuts.
  5. Drop spoonfuls of the batter onto the prepared baking sheet.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Let cool slightly before transferring to a wire rack to cool completely.
