- 1 pound ground turkey
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and garlic, sauté until translucent.
- Add ground turkey and cook until browned.
- Stir in soy sauce, ground ginger, salt, and pepper.
- In a separate pot, bring chicken broth to a boil and add jasmine rice.
- Cover and simmer for 18 minutes, or until rice is fluffy.
- Mix the cooked rice with the turkey mixture and add mixed vegetables.
- Cook for an additional 5 minutes.
