  • 1 pound chicken breast, diced

  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix chicken with olive oil, garlic powder, oregano, salt, and pepper.
  3. Spread the chicken on a baking sheet and bake for 20 minutes or until cooked through.
  4. Prepare the rice according to package instructions.
  5. Once the chicken is done, combine rice, chicken, tomatoes, cucumber, feta, olives, onion, and parsley in a large bowl.
