  • 2 cups cooked quinoa
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced chicken, garlic powder, oregano, salt, and black pepper. Cook until chicken is browned and cooked through.
  3. In a bowl, combine quinoa, cherry tomatoes, cucumber, feta cheese, olives, red onion, and parsley.
  4. Add the cooked chicken to the bowl and toss to combine.
  5. Serve warm or at room temperature.
