  • 200 grams chopped dates
  • 250 ml boiling water
  • 75 grams unsalted butter
  • 150 grams brown sugar
  • 2 large eggs
  • 150 grams all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 200 ml heavy cream
  • 100 grams golden syrup

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Soak the chopped dates in boiling water for about 15 minutes, then mash the mixture.
  3. Cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the flour and baking powder, followed by the date mixture and vanilla extract.
  6. Pour the batter into a greased baking dish and bake for 30-35 minutes.
  7. For the sauce, combine heavy cream and golden syrup in a saucepan over low heat until warm.
  8. Serve the pudding warm with the sauce poured over the top.
