  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup peppermint chips
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, melt the butter and stir in the sugars until well combined.
  3. Add the eggs and vanilla, mixing thoroughly.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the peppermint chips and pour the batter into a greased baking pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow to cool, then sprinkle with crushed candy canes before slicing.
