Fall Apple Cider Stew Mash

A delicious and comforting stew with the flavors of fall, featuring turkey bacon and apple cider.

  • 1 pound turkey bacon
  • 2 cups apple cider
  • 4 large potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add onions and garlic to the pot; sauté until translucent.
  3. Add potatoes, carrots, and cook for 5 minutes.
  4. Stir in apple cider and herbs; bring to a boil.
  5. Reduce to a simmer and cook until vegetables are tender.
  6. Return bacon to the pot, season with salt and pepper, and serve.

Notes

  • For a thicker stew, mash some of the potatoes before serving.
  • Feel free to add other vegetables like celery or green beans.
