Egyptian Beef Goulash

  • 2 pounds beef stew meat
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 can (14 ounces) diced tomatoes
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup peas
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until translucent.
  3. Add the beef and brown on all sides.
  4. Stir in the paprika, cumin, and cinnamon.
  5. Add the diced tomatoes and beef broth; bring to a boil.
  6. Reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  7. Add the potatoes, carrots, and peas; cook until vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

  • For a thicker sauce, follow up with a cornstarch slurry.
  • You can add your favorite vegetables as desired.
