  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups green frosting
  • 24 chocolate wafer cookies
  • 48 candy eyes
  • 12 edible witch hats (optional)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract. Mix until just combined.
  4. Divide the batter evenly among the cupcake liners.
  5. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  6. Let the cupcakes cool completely.
  7. Frost the cupcakes with green frosting.
  8. Top each cupcake with a chocolate wafer cookie for the witch’s hat and place two candy eyes on each cupcake.
