- 1 cup sushi rice
- 1 1/2 cups water
- 1 pound fresh salmon fillet
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Preheat your oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce to low heat, cover, and simmer for about 20 minutes.
- While the rice cooks, prepare the salmon by seasoning it with olive oil, soy sauce, rice vinegar, and sesame oil. Place it in the oven and bake for 15-20 minutes until cooked through.
- Once the rice is done, fluff it with a fork and allow it to cool slightly.
- In a bowl, combine the cooked salmon, green onions, and cilantro, mixing gently.
- To assemble, take small portions of rice and press them into a muffin tin, creating a cup shape.
- Fill each rice cup with the salmon mixture and top with avocado slices.
