Dump-and-Bake Chicken Tzatziki Rice

A quick and simple recipe for a delicious Dump-and-Bake Chicken Tzatziki Rice that is perfect for weeknight meals.

  • 1 lb boneless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Salt to taste
  • Black pepper to taste
  • 1 cup diced cucumbers

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the rice, chicken broth, garlic powder, onion powder, oregano, salt, and pepper.
  3. Place the chicken breasts on top of the rice mixture.
  4. Spread the tzatziki sauce over the chicken.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes until the chicken is cooked through and the top is golden.
  7. Let it rest for a few minutes before serving with diced cucumbers on top.
