  • 2 dried guajillo peppers
  • 1 chipotle pepper in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 4 cups beef broth
  • 1 lime, juiced
  • 8 corn tortillas
  • 1 cup chopped cilantro
  • 1 cup diced onions

Instructions

  1. In a blender, combine onion, garlic, guajillo peppers, chipotle pepper, cumin, oregano, and broth. Blend until smooth.
  2. Place the chuck roast in a slow cooker and pour the sauce over the meat.
  3. Cook on low for 8 hours or until the meat is tender.
  4. Remove the meat, shred it, and return it to the pot.
  5. To serve, heat corn tortillas and fill them with the shredded beef, cilantro, and diced onions.
