- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- 1 cup heavy cream
- 1 cup shredded cheese (optional)
- Salt to taste
- Black pepper to taste
- In a large pot, heat olive oil over medium heat.
- Add diced onion and cook until translucent.
- Stir in minced garlic and cook for another minute.
- Add chicken breasts and cook until no longer pink.
- Add white beans, green chiles, chicken broth, cumin, chili powder, and oregano.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Stir in heavy cream and cheese if using. Cook for another 5 minutes.
