- 1 cup green or brown lentils
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup coconut milk
- 2 cups spinach
- 1 tablespoon lemon juice
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, cumin, smoked paprika, salt, and black pepper. Stir for 1-2 minutes until fragrant.
