Creamy Dill Salmon Soup

A comforting and delicious soup that combines the rich flavors of salmon with fresh dill.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups diced potatoes
  • 1 pound salmon, cut into chunks
  • 1 cup heavy cream
  • 3 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the vegetable broth and bring to a boil. Stir in the potatoes and cook until tender.
  3. Add the salmon and cook until just opaque.
  4. Reduce heat and stir in heavy cream and dill. Season with salt and pepper to taste.
  5. Serve hot, garnished with additional dill if desired.

Notes

  • For a thicker soup, you can blend a portion of it and mix it back in.
  • Feel free to substitute the salmon with your choice of fish.
