Creamy Cajun Chicken Pasta

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 4 strips turkey bacon, cooked and chopped
  • 1 tablespoon Cajun seasoning
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • Salt to taste
  • Black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook fettuccine pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken and cook until browned, about 5-7 minutes.
  4. Stir in chopped turkey bacon, Cajun seasoning, bell peppers, and mushrooms. Cook until vegetables are tender.
  5. Pour in heavy cream and bring to a simmer, then add Parmesan cheese. Stir until the cheese has melted and the sauce is creamy.
  6. Toss the cooked pasta in the sauce and stir to combine thoroughly.
  7. Season with salt and black pepper to taste.
  8. Garnish with chopped parsley before serving.

Notes

  • For more heat, add extra Cajun seasoning.
