A delicious and easy recipe for cottage cheese salad with a unique turkey bacon twist.

Ingredients

  • 1 cup cottage cheese
  • 2 slices turkey bacon, cooked and crumbled
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cottage cheese, turkey bacon, cucumber, cherry tomatoes, red onion, and dill.
  2. In a small bowl, whisk together the lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and mix until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added crunch, consider adding bell peppers.
  • Feel free to substitute Greek yogurt for cottage cheese for a different flavor.
