Comforting French Onion Pot Roast

  • 3 pounds chuck roast
  • 1 cup turkey bacon, chopped
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium heat.
  3. Add the turkey bacon and cook until crispy, then remove and set aside.
  4. In the same pot, sear the chuck roast on all sides until browned.
  5. Add the onions and garlic, cooking until softened.
  6. Pour in the beef broth and Worcestershire sauce, then return the turkey bacon to the pot.
  7. Season with salt, pepper, and thyme.
  8. Cover and roast in the oven for 3-4 hours, until the meat is tender.
  9. Let rest before slicing and serving.
