Comforting French Onion Pot Roast

A rich and flavorful pot roast ideal for chilly evenings.

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 teaspoons thyme
  • 2 teaspoons rosemary
  • Salt and pepper to taste
  • 4 slices of French bread
  • 1 cup Gruyère cheese, shredded

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned.
  3. Remove the beef and sauté onions and garlic until soft.
  4. Deglaze the pot with red wine, scraping up any brown bits.
  5. Add back the beef, broth, thyme, and rosemary. Bring to a simmer.
  6. Cover and transfer to the oven, cooking for 3-4 hours until tender.
  7. During the last 15 minutes, place French bread on top of the roast and sprinkle with Gruyère cheese. Return to oven until cheese is melted and bubbly.

Notes

  • For added flavor, you can use homemade beef broth.
  • This dish pairs well with a side of roasted vegetables.
