2 chicken breasts
1 cup fresh parsley
1/2 cup olive oil
1/4 cup red wine vinegar
4 cloves garlic
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
2 cups cooked rice
1 cup cherry tomatoes, halved
1 avocado, sliced
Instructions
Prepare the chimichurri by blending parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and black pepper in a food processor until smooth.
Marinate the chicken breasts in half of the chimichurri sauce for at least 30 minutes.
Grill the marinated chicken on medium-high heat for 6-7 minutes on each side or until fully cooked.
Slice the grilled chicken and serve it over cooked rice.
Top with cherry tomatoes, avocado slices, and drizzle with the remaining chimichurri sauce.
