- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 8 flour tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken, enchilada sauce, cumin, and chili powder.
- Lay a tortilla flat and add a portion of the chicken mixture, then sprinkle with cheese.
- Roll the tortilla tightly and place it seam-side down in a baking dish.
- Repeat with remaining tortillas and chicken mixture.
- Pour the remaining enchilada sauce over the rolled tortillas and top with more cheese.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden.
- Serve warm with sour cream and cilantro.
Notes
