Chicken Enchiladas

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, enchilada sauce, cumin, and chili powder.
  3. Lay a tortilla flat and add a portion of the chicken mixture, then sprinkle with cheese.
  4. Roll the tortilla tightly and place it seam-side down in a baking dish.
  5. Repeat with remaining tortillas and chicken mixture.
  6. Pour the remaining enchilada sauce over the rolled tortillas and top with more cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Serve warm with sour cream and cilantro.

Notes

  • For a spicier version, add jalapeños to the chicken mixture.
  • These enchiladas can also be made with beef or beans for variation.
