Beet Salad

A refreshing and innovative beet salad that includes turkey bacon for an extra twist.

Ingredients

  • 2 cups roasted beets
  • 4 slices turkey bacon
  • 1 cup arugula
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap the beets in foil and roast for about 45 minutes until tender.
  3. While beets are roasting, cook turkey bacon in a skillet until crispy. Remove and chop into pieces.
  4. In a large bowl, combine roasted beets, arugula, feta cheese, walnuts, and turkey bacon.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Drizzle the dressing over the salad and toss gently to combine.
  7. Serve immediately.

Notes

  • For extra flavor, add sliced red onion or avocado.
  • Feel free to substitute the turkey bacon with regular bacon if preferred.
