  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheese
  • 1 packet enchilada seasoning
  • 10 flour tortillas
  • 1 cup enchilada sauce
  • 1/2 cup sour cream

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked.
  2. Stir in the black beans, corn, and enchilada seasoning, and cook for an additional 5 minutes.
  3. Heat the tortillas in a separate pan until warm.
  4. Fill each tortilla with a portion of the beef mixture and roll them up.
  5. Place the rolled tortillas in the skillet, seam side down, and pour the enchilada sauce over the top.
  6. Sprinkle with cheese and cover the skillet. Cook for 10 minutes until the cheese is melted.
  7. Serve topped with sour cream.
