Balsamic Potato Salad

A delicious twist on the classic potato salad featuring balsamic vinegar and turkey bacon for a flavorful dish.

  • 2 pounds baby potatoes
  • 5 slices turkey bacon
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook the baby potatoes in a large pot of salted boiling water until tender, about 15-20 minutes. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, garlic powder, salt, and pepper.
  4. Once the potatoes are cooled, cut them into halves or quarters and place in a large bowl.
  5. Add the turkey bacon and dressing to the potatoes, tossing gently to combine.
  6. Garnish with fresh parsley before serving.

Notes

  • For added flavor, allow the salad to marinate for at least 30 minutes before serving.
  • Feel free to add other vegetables like cherry tomatoes or bell peppers for a colorful salad.
