  • 2 pounds beef chuck roast
  • 1/2 cup dried guajillo chiles
  • 1/4 cup dried ancho chiles
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • 2 cups shredded cheese
  • 1/4 cup chopped cilantro
  • 2 limes, cut into wedges

Instructions

  1. Prepare the chiles by removing stems and seeds, then soak them in hot water for 15 minutes.
  2. In a blender, combine soaked chiles, onion, garlic, cumin, oregano, and beef broth; blend until smooth.
  3. In a large pot, sear the beef chuck roast until brown, then pour the blended sauce over it.
  4. Cover and simmer on low heat for 2-3 hours until the beef is tender and easily shredded.
  5. Once cooked, shred the beef and assemble quesatacos by filling tortillas with beef and cheese, then grilling until crispy.
  6. Serve with chopped cilantro and lime wedges.
