- 2 pounds beef chuck roast
- 1/2 cup dried guajillo chiles
- 1/4 cup dried ancho chiles
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 4 cups beef broth
- 12 corn tortillas
- 2 cups shredded cheese
- 1/4 cup chopped cilantro
- 2 limes, cut into wedges
- Prepare the chiles by removing stems and seeds, then soak them in hot water for 15 minutes.
- In a blender, combine soaked chiles, onion, garlic, cumin, oregano, and beef broth; blend until smooth.
- In a large pot, sear the beef chuck roast until brown, then pour the blended sauce over it.
- Cover and simmer on low heat for 2-3 hours until the beef is tender and easily shredded.
- Once cooked, shred the beef and assemble quesatacos by filling tortillas with beef and cheese, then grilling until crispy.
