Asian Sticky BBQ Chuck Roast

  • 3 pounds chuck roast
  • 1 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1/4 cup water

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large bowl, combine soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
  3. Place the chuck roast in a roasting pan and pour the marinade over it, making sure it’s well coated.
  4. Cover the pan with foil and cook in the oven for 2.5 to 3 hours, or until the meat is tender.
  5. In a small saucepan, mix cornstarch and water, then stir over medium heat until thickened.
  6. Remove the roast from the oven, discard the foil, and brush the thickened sauce over the top.
  7. Increase the oven temperature to 400°F (200°C) and cook for an additional 15-20 minutes until glazed.
  8. Let the roast rest for 10 minutes before slicing and serving.

  • For a spicier kick, add crushed red pepper flakes to the marinade.
