Ingredients
Scale
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups peeled and diced apples
1/4 cup granulated sugar (for topping)
2 teaspoons ground cinnamon (for topping)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually mix the dry ingredients into the wet mixture until just combined.
Fold in the diced apples gently.
Spread the batter evenly in the prepared pan.
Mix together 1/4 cup sugar and 2 teaspoons cinnamon, then sprinkle evenly over the batter.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let cool before slicing into bars.
Notes
For an extra touch, add chopped nuts or raisins to the batter.
These bars taste even better the next day after the flavors have melded.
